Recipes

Baked Ziti

Ingredients

  • 4 cups marinara sauce
  • 2 cups ricotta cheese
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/4 tsp red pepper flakes
  • 1 lb ziti pasta
  • 1.5 tbsp olive oil
  • 1 lb fresh spinach
  • 1.5 cups mozzarella, grated
  • 1/4 cup Parmesan, grated
  • Salt and pepper

Instructions

~45 min

Serves 8

  1. Preheat oven to 425 degrees. Spread 1/2 cup marinara sauce in the bottom of an oven-safe baking dish.
  2. In a medium bowl, combine ricotta cheese, garlic, oregano, red pepper flakes, 1/2 tsp salt, and several grinds of pepper.
  3. Print a large pot of water to boil. Cook pasta according to package instructions. Drain noodles once cooked.
  4. Return large pot to stove. Cover bottom with 1/2 tbsp olive oil. Add spinach and a pinch of salt. Toss and saute for 1-2 minutes until wilted. Turn off heat, remove spinach from pot, and gently squeeze excess water from spinach. Chop and set aside.
  5. Add pasta to the pot along with remaining marinara, 2/3 chopped spinach, 1/4 tsp salt, and several grinds of pepper. Toss until combined.
  6. Add half the pasta to oven-safe baking dish. Top with dollops of ricotta and remaining 1/3 spinach. Spread the remaining pasta on top. Top with mozzarella and Parmesan. Drizzle with remaining 1 tbsp olive oil.
  7. Place in oven and bake until cheese is browned, about 20 minutes.
