Recipes

Greek Chicken

Ingredients

  • 1 cup plain yogurt
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 1/2 tbsp dried oregano
  • 1 medium lemon
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 bunch parsley
  • 8 pieces chicken

Instructions

~1 hr

Serves 4

  1. Make marinade by combining yogurt, olive oil, minced garlic, oregano, salt, and pepper in a large bowl.
  2. Use cheese grater to scrap a thin layer of yellow zest from the lemon into the bowl. Add juice from half the lemon (~1-2 tbsp) to the marinade.
  3. Roughly chop a handful of parsley and add to the marinade.
  4. Add chicken pieces and marinade to a gallon-sized ziploc bag. Close the bag and massage to mix the contents to make sure chicken is well coated. Refrigerate the bag for 30 minutes.
  5. While marinating, preheat oven to 375 F.
  6. Place the marinated chicken in an oven-safe pan. Bake the chicken uncovered for 45-60 minutes. Allow to cool and enjoy!
